Enhance Chicken with Garlic
Why I Love This Recipe
I learned at an early age to cook from my mother. She had little time for herself as she worked all day. Yet, she was able to prepare tasty meals in short time. Being the oldest of 3 she taught me cook at an early age.
She used garlic often to enhance the flavors of steak, chicken, lamb and spaghetti. So if you like garlic, as I do, I am happy to share her recipes with you.
Ingredients You'll Need
Garlic, 2 to 3 cloves
Salt, to taste
One quartered chicken
A. Place garlic in a wooden garlic crusher and lightly coat the garlic with salt. Mash the garlic.
B. Add juice of one lemon to garlic and stir.
C. Add water to garlic crusher until 3/4 full.
D. Place chicken, skin side up, in a baking pan. Chicken should fit snuggly in pan.
Note: You want to curtail evaporation of juices formed by broiling.
E. Preheat your oven to 400ºF.
F. Place chicken preheated oven for 15 minutes. Reduce heat to 375ºF.
G. Remove chicken from oven and pour mixture with garlic evenly over the chicken.
H. Rotate chicken every 15 minutes. Add water to ensure bottom of pan is not dry.
I. Cook until done, about 1 hour total time.
J. Place chicken on a serving dish.
K. Pour gravy into a suitable bowl.
