Escalloped Corn

A good, basic recipe. Great for potlucks.
Ingredients You'll Need
1 can whole kernel corn
2 cans creamed corn
1 c sour cream
1/2 c margarine, melted
2 eggs, beaten
1 pkg jiffy corn muffin mix
salt and pepper
1 c grated cheddar cheese
Directions
Mix corn, creamed corn, margarine, eggs, muffin mix, salt and pepper together. Bake 35 minutes at 325 degrees. Add the grated cheese to the top during the last ten minutes of baking. Let stand for a few minutes before serving.
