Ingredients You'll Need

1/2 c mayonnaise
3 tbsp lime juice
2 jalapenos
1 tbsp vegetable oil
4 c corn kernels
2 tsp garlic powder
1/2 tsp chili powder
1/2 c crumbled cojita cheese
1/4 chopped cilantro


mix mayonnaise, lime juice, and jalapenos in medium bowl; set aside

heat oil in large skillet on high heat; spread corn in even layer in skillet; cover; cook without stirring until corn is charred; remove skillet from heat; stir in garlic and chili powder until well blended, transfer corn to mayonnaise mixture

sprinkle with cojita cheese and sprinkle on cilantro; blend well and serve
