Ingredients You'll Need
• 4 ripe plantains (yellow with some black spots)
• 2 tablespoons red palm oil
• 1 medium onion, sliced
• ½ teaspoon salt (adjust to taste)
• ¼ cup roasted peanuts
• 4 boiled eggs
• 1 avocado, sliced (optional but traditional)
• 1–2 fresh chilies, optional
Directions
1. Peel and chop the plantains into medium chunks.
2. Boil the plantains in lightly salted water for 10–12 minutes, until soft.
3. Drain the water and transfer the hot plantains into a large bowl or mortar.
4. Mash the plantains using a masher or pestle until smooth but still slightly textured.
5. Heat the palm oil in a small pan and sauté the sliced onions for 2–3 minutes until fragrant
6. Pour the warm palm oil onion mixture over the mashed plantains and mix thoroughly.
7. Taste and adjust salt as needed.
8. Serve the Eto topped with roasted peanuts, boiled eggs, and sliced avocado.
9. Add fresh chilies on the side if you want heat.
