FRESH DAIRY FREE STRAWBERRY MOUSSE

Fresh strawberries in season are so good. We cannot resist purchasing them every time we see them. This mousse is really good, and dairy free. .
Ingredients You'll Need
1 pt. box fresh strawberries
1/4 c. sugar
1 can of cream of coconut (I use Coco Lopez, found in the drink mixers aisle of the grocery), chilled overnight
Clean and slice all but 4 strawberries, set aside 4 berries for garnish. In a blender process the sliced strawberries and sugar to a puree. Remove half of puree and set aside. Whip chilled cream of coconut until stiff peaks form, fold in half of strawberry puree. Divide the puree you set aside between 4 pretty glasses, then top with coconut cream mixture. Chill for at least an hour or overnight. Top with remaining fresh sliced strawberries. Serve immediately.
