FRESH STRAWBERRY MOUSSE

A rich and delicious fresh strawberry mousse.
Ingredients You'll Need
2 lb. package of fresh strawberries
2 packages of strawberry jello (sugar free is fine)
juice of 1 lemon
2 8 oz. packages of cream cheese
14 oz. can of sweetened condensed milk
1 qt. whipping cream, divided
3/4 c. sugar, divided
Directions
Heat 1 1/2 c. water in microwave on high for 5-6 minutes. Add strawberry jello to boiling water and stir for several minutes until dissolved. Set aside in freezer for 30 minutes, stirring every 10 minutes. Wash and hull strawberries. Save 4 strawberries for garnish. Place remaining strawberries and 1/2 c. sugar in a blender and puree to a chunky puree. Set aside in fridge. Using stand mixer, beat 2 c. whipping cream until stiff peaks form. Set aside. Using same bowl of mixer, cream the cream cheese until smooth with sweetened condensed milk and strawberry jello. Mix in half of strawberry puree and whipping cream. Divide remaining strawberry puree between 8 pretty glasses. Top with strawberry mousse mixture. Beat remaining 2 c. whipping cream with 1/4 sugar until stiff peaks form. Top mousse with whipped cream and garnish with 1/2 strawberry. Refrigerate until serving.
