Falafel Salad with Creamy Garlic Dressing

Why I Love This Recipe

Falafel over a bed of lettuce with garlic dressing.


Ingredients You'll Need

1 cup cherry tomatoes
3 pickled cherry peppers
1/2 of a cucumber
1 small head of lettuce
5 tbl. olive oil
2 garlic cloves
1 small onion
3/4 tsp. cumin
1/2 tsp. corriander
1/4 tsp. cayenne pepper
One can chickpeas
1 large egg
2 tbl. tahini
1/2 tsp. salt
3/4 cup panko bread crumbs


Directions

Carmelize onions add garlic, cumin, corriander, cayenne pepper, cook one minute.


Rinse and drain chickpeas coarsely chop then add to onion mixture.


Add egg, tahini, garlic and salt to blender, add to chickpea mixture. Make patties and roll in breadcrumbs.


Cover and chill patties for 10 minutes. Fry in olive oil until golden.


Creamy Garlic Dressing
2 tbl. sherry vinegar
2 tsp. dijon mustard
1/4 tsp. salt
1/8 tsp. pepper
1 garlic clove
1/4 cup plain yogurt
1/4 cup olive oil

Mix together and blend.


Put falafel, cherry tomatoes, cherry peppers, and cucumbers over lettuce. Pout dressing over salad.
