Fennel, Apple and Date Salad with Sweet n' Salty Cinnamon Dressing

Why I Love This Recipe
This was one of my sporadic creations- an accident in the kitchen that turned into a salad to die for!
Ingredients You'll Need
Prepare Dressing:
Juice of 2 limes or 1 lemon
1tsp cumin
1 tsp cinnamon (these are approximate! add more/less cumin/cinnamon depending on preference)
1 tablespoon maple syrup
2 tablespoons olive oil
salt and pepper to taste
Chopped crunchy veggies in bite size pieces:
1/2 fennel bulb- including some of it’s “hair” and stems (they have great flavour)
4-5 chopped dates
1 green apple
1/4 of a large sweet onion
(can also use celery or red/yellow pepper)
Throw all these veggies into your salad bowl and marinate them in it for 5min or until dinner is ready
When ready to eat stir in:
chopped cilantro (1/4c coarsely chopped)
lettuce leaves
(can also throw in grated carrot or beet or chopped avocado if you feel like it)
