Festive Candied Yams

Why I Love This Recipe
I make this dish every year at Christmas and Thanksgiving and it's been a hit with my family every time, they're always impressed!
Ingredients You'll Need
- 4 large red skinned sweet potatoes (yams), peeled, cut into 1" round pieces
- 5 tbsp. butter
- 2/3 cup packed brown sugar
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1 tsp. vanilla extract
- 1/4 tsp. nutmeg
- 2 cups mini marshmallows
- 1/2 cup walnuts, finely chopped
Directions
-Boil yams until soft, yet firm enough to manage
-Cut width-wise into 4 inch round pieces, set aside in baking dish
-Start mixing sugar, butter, vanilla, cinnamon, nutmeg and nuts together in a bowl
-Pour mixture evenly over yams in layers (1 layer yams, 1 layer mixture, repeat)
-Place baking dish in oven at 375º for 30-40 min, covered
-Remove dish from oven, top off with mini marshmallows evenly on top
-Place back in oven for 5 min. or until golden brown, uncovered
