Why I Love This Recipe
Brie cheese, originating from the Brie region in France, has been enjoyed for centuries and was once considered a delicacy by Charlemagne, the 8th-century King of the Franks!
Ingredients You'll Need
1 sheet of puff pastry, thawed
1/2 cup cranberry sauce, homemade or store-bought
1 wheel of Brie cheese (about 8 oz), cut into 1-inch cubes
1/4 cup pine nuts, lightly toasted
Fresh thyme leaves for garnish
1 egg, beaten, for egg wash
Directions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out the puff pastry sheet on a lightly floured surface. Cut it into 12 equal squares.
Place each pastry square into a cup of a mini muffin tin, gently pressing down to form a small pastry cup.
Add a small cube of Brie into each pastry cup, followed by a teaspoon of cranberry sauce.
Sprinkle a few toasted pine nuts on top of the cranberry sauce in each cup.
Brush the edges of the pastry with the beaten egg to encourage a golden color when baked.
Bake in the preheated oven for 12-15 minutes, or until the pastry is puffed and golden brown. The cheese should be melted and bubbly.
Remove from the oven and let cool slightly before garnishing with fresh thyme leaves.
Serve warm or at room temperature.
Pairs Well With
For an alcoholic pairing, a crisp Sauvignon Blanc complements the creaminess of the Brie and the tartness of the cranberries. For a non-alcoholic option, try a sparkling apple cider to mirror the festive nature of the dish
