1 cup ground walnuts
2 tablespoons butter, melted
1 carton (15 oz) ricotta cheese
3/4 cups finely chopped mushrooms
1/2 cup finely crushed breadcrumbs
1-1/2 cups finely crumbled feta cheese
3 large eggs
1/3 cup finely chopped pitted ripe olives
1/4 cup milk
1/8 teaspoon salt
3 to 4 sprigs fresh oregano
1/2 teaspoon pepper
1/4 to 1/3 cup sliced ripe olives
3 to 4 cups fresh sliced vegetables


For crust, mix walnuts, crumbs and butter. Press onto the bottom of a 9-inch springform pan. for filling, in a large bowl beat feta and ricotta cheeses with an electric mixer on medium speed until combined. Add eggs all at once, beating on low speed until just combined. Stir in mushrooms, chopped olives, milk, pepper, and salt with a spoon. Pour filling into the pan. Bake in a 325 degree F. oven for 40-45 minutes or until the center appears nearly set when shaken. Cool for 30-45 minutes on a wire rack. Cover and refrigerate 3 hours. Garnish with olives and oregano, as desired. Serve with fresh sliced vegetables, if desired.
