Why I Love This Recipe

This five bean soup is delicious and provides a good source of protein.


Ingredients You'll Need

1/4 pound fava bean
1/4 pound pinto bean
1/4 pound white bean
1/4 pound lentils
1/4 pound red beans
2 vegetable bouillon cubes
1 red bell pepper diced
2 carrots diced
6 roma tomatoes chopped
2 sprigs fresh thyme
1 large onion chopped
6 garlic cloves minced
dash of olive oil
salt to taste
bunch of parsley chopped


Directions

Simmer 5 beans for 2 hours. After 1 hour add bell pepper, carrots, tomatoes and thyme to beans. In separate pan sauté onion and garlic and add it to the pot. Salt to taste. Top it off with parsley.
