Flash Saute of Vegetables

Why I Love This Recipe
This is from my "Oh no, I forgot a side dish" collection of recipes. It costs about a dollar to feed 2, is healthy and low fat, and can be prepared at the very last minute. It also looks great on the plate and goes with just about entree.
Ingredients You'll Need
1T olive oil
1T butter, unsalted
1 smallish zucchini
1 smallish yellow squash
1 plum tomato, as ripe as you can find
salt and pepper to taste
Directions
Slice the zucchini and yellow squash like fat matchsticks. Do a fine dice of the plum tomato. Set all aside next to the stove.
Get a medium skillet (non-stick is ok here) rippin' hot. Add the butter and oil. Working quickly, add the zucchini and squash to the saute pan. Flip or stir to coat everything with the oil and butter. Call everyone to dinner. Season with salt and pepper. Wait about 90 seconds, then add the tomatoes. Season again if needed. All you want to do is get the tomatoes hot. When done, serve.
Notes: you can tweak this pretty much anyway you want to. Serving with fish? Give it a splash of lemon juice. Have some herbs in the fridge you need to use? Mince and stir in.
