Focaccia Bread

Ingredients You'll Need
1/2 C chopped onions (optional)
1 1/2 C warm water (110 degrees)
1 tsp salt
1 1/2 Tbs sugar
2 Tbs olive oil
rosemary
4 C flour
1 pkg dry yeast
Directions
Mix water and sugar in a large bowl
Sprinkle yeast over sugar water and let sit until foamy (about 5 minutes)
Stir in 1/2 tsp salt and olive oil, mix well
Add 2 1/2 C of the flour, stirring until just blended, glossy and stretchy, then stir in the rest of the flour and mix
Scrape dough onto floured surface, knead until smooth and springy, about 10 minutes, add flour to each knead to prevent sticking
Place dough in a greased bowl, top dough with a little olive oil, cover with plastic wrap and let sit in warm location for about 45 minutes or until size has doubled, or let rise in refrigerator until the next day
Stretch dough on cookie sheet (maybe line with parchment paper, or light olive oil coating), shaping into a rectangle about 1/2 inch thick.
Top with a sprinkle of salt and dried rosemary, cover and let rise until doubled again, then bake at 400 for 20 - 25 minutes
