Why I Love This Recipe


Ingredients You'll Need

500 grams/1 lbs shelled horse beans
6 large ripe tomatoes peeled, seeded and chopped
2 cloves of garlic, finely chopped or pressed
1 teaspoon of cumin
1 teaspoon of salt
a quarter teaspoon of black pepper
1 and a half teaspoon of paprika powder
one eight of a teaspoon of ground hot pepper
100 ml of olive oil
a quarter cup of chopped cilantro


Directions

1 Cook the beans in plenty of salted water, partially covered over medium-high heat until tender and can be popped out of their skins, drain and set aside.


2 While the beans are cooking, put all the other ingredients in a skillet and mix well, cook uncovered over medium-high heat, stirring ocassionally and mashing the tomatoes as they soften until a thick sauce has formed [ca. 25 minutes]


3 Add the cooked beans and two tablespoons of water to the sauce and simmer for a few minutes to heat the beans


4 Serve warm with fresh bread
