1 bag (14 oz.) oatmeal cookies
3 pkgs. (8 oz. each) cream cheese
1 can (14 oz.) condensed milk
3 large eggs
1 can (21 oz.) strawberry pie filling
1 teaspoon vanilla
1 jar strawberry preserves
1 stick butter
1/2 cup vegetable oil
1 pkg. (18.25 oz.) strawberry cake mix


Directions

In a food processor, finely crush cookies set aside. Melt butter. In a bowl add cake mix and oil mix well and set aside. Spray a 10-in. springform pan with Pam.


Mix cookies and melted butter.( you don't want it to wet) Form the crust going up the sides. Add the cake mix batter on top and bake at 325ºF for 25-30 minutes. While that is baking, make filling.


Add softened cream cheese and beat until smooth. Add condensed milk, continue beating. Add eggs, one at a time, until well mixed. Stir in strawberry pie filling. pour into prepared crust and set in a water bath.


Lower temperature to 300ºF and bake for an additional 3-4 hours.


The cheese cake when done should be a golden brown color and still slightly shake in the middle. Let cool in pan on a baking rack for 10 minutes. Loosen the ring and refrigerate on the baking rack overnight. Take a wide spatula and gently transfer cooled cake on a serving dish. Spread strawberry preserves on top.
