"Potato Burrito"

Serves 2 | Prep Time 10 minutes | Cook Time 10 minutes

Why I Love This Recipe

This recipe is essentially an Indian burrito. It is popular among the streets of Mumbai. Although, you can't really find this being served anywhere else. So I have come to save the day! This frankie tastes just like the authentic ones but at the comfort of your own home. Like I say with all my other recipes, this is easy quick to make. And it is delicious!

Ingredients You'll Need

For The Potato Patty:
2 boiled potatoes (mashed)
salt to taste
1 tbsp oil (for cooking)
1/2 tsp red chili powder
1/4 tsp garam masala

For the Frankie:
2 tortillas
Few slices of onion
Few slices of tomato
Few slices of cucumber
Few Lettuce leaves
2 tsp Ketchup
1 tsp Chutney

For the potato patty:
1. In a pot, put the oil, mashed potatoes, salt, red chili powder and garam masala.
2. Saute for 5 minutes.
3. Let the mixture cool.
4. Once cooled, shape the mixture into two cylindrical logs.
5. in a pan, heat a little extra oil and shallow fry the patties on both sides.

For the Frankie:
1. Heat the tortillas.
2. Mix the ketchup and chutney in a small bowl and spread a thin layer on the both the tortillas.
3. Assemble the frankie by adding the potato patty, lettuce, tomato, onions and cucumbers.
4. Roll the tortilla to make a wrap.
5. Serve!
