Ingredients You'll Need

1½ cups vegetable oil
3 eggs
2 cups sugar
3 cups flour
1 cup milk
1 tsp vanilla extract
1 tsp salt
1 tsp baking soda
3 apples, peeled, cored, and chopped
1/2 cup chopped nuts (for icing)
2 cups light brown sugar (for icing)
1 cup evaporated milk (for icing)
1 stick of butter (for icing)


Preheat the oven to 325°F.

Sift together the flour, salt, and baking soda.

In a mixer, combine the sugar and vegetable oil. Add the eggs one at a time, mixing well after each addition.

Add the dry ingredients to the mixer and mix until combined.

Stir in the chopped apples and vanilla extract.

Pour the batter into three 9-inch round cake pans lined with parchment paper.

Bake for 45 minutes or until a toothpick inserted into the center comes out clean.

Cool the cakes in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

For the icing, combine the light brown sugar, evaporated milk, and butter in a saucepan. Bring to a boil over low heat and boil for 1 minute.

Remove the icing from the heat and allow it to cool to room temperature.

Spread the icing over the cooled cakes and sprinkle with chopped nuts.

Store the cakes tightly covered to keep them fresh for weeks.
