French Silk Pie

My daughter, Michelle, is crazy for French Silk Pie. So we have it nearly every holiday. It's always one of the first to be eaten up.
Ingredients You'll Need
For Cookie Crust:
11/2 c. chocolate cookie crumbs
1/4 c. sugar
6 T. melted butter
For Pie Filling:
1 stick butter
3/4 c. sugar
4 oz. unsweetened baking chocolate
2 eggs
1 t. vanilla
1 c. whipping cream
Topping:
1 c. whipping cream
1/4 c. sugar
1/2 t. cream of tarter (optional)

Directions
For Cookie Crust: Combine cookie crumbs with sugar and melted butter. Pour into pie plate spread evenly up sides and bottom. Put into an oven preheated to 375 F for 7 minutes. Set aside to cool, when somewhat cool, place in fridge to cool. For Filling: Cream butter and sugar together in bowl of stand mixer for 2-3 minutes until light and fluffy. Meanwhile chop up chocolate into small pieces and place in plastic bag. Microwave for 2 minutes at 50% power. Massage bag, if chocolate is not completely melted continue to microwave at 50% power in 30 second intervals until completely melted. Snip off end of bag and add to
butter mixture with eggs and vanilla. Beat 2-3 minutes or until no sugar crystal remain, and mixture is completely smooth. In another bowl, beat cream until stiff peaks form. Fold whipped cream into chocolate mixture. Pour pie filling into crust and put in fridge. For Topping: Start whipping cream, adding sugar and tarter. Beat until stiff peaks form. Top pie with whipped cream, swirling cream on top. Top with shaved chocolate, if desired. Freeze pie, remove from freezer about 30 minutes before serving.
