Why I Love This Recipe
Two summers ago when making a fresh bluberry pie I accidentally added two tablespoons of lemon juice rather than two teaspoons as called for in the Bettter Homes and Gardens recipe I had been following for years. My husband declared it the best blueberry pie he had ever had so I have of course continued the "accident". He picked blueberries from our yard yesterday and we had our first pie of the season.
While I'm not including the pie dough recipe, I recommend making your own rather than using anything from the store.
Ingredients You'll Need
5 cups fresh blueberries
1 cup sugar
1/4 cup flour
Juice of one lemon
1 tablespoon butter
Directions
Combine blueberries, sugar, flour and lemon juice.
Put in pastry lined pie plate and dot with butter.
Squeeze any remaining juice in lemon over filling.
Place top crust ovr filling and cut slips in crust.
Cover edge of pie with foil.
Bake in 375 degree oven for 20 minutes.
Remove foil and continue baking 20 - 25 minutes until crust is golden.
