Why I Love This Recipe
Pickling cucumbers has been a preservation method for over 4,000 years, originating in Mesopotamia.
Ingredients You'll Need
4 medium cucumbers, thinly sliced
1 small onion, thinly sliced
1 cup white vinegar
1/2 cup water
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon red pepper flakes (optional)
Fresh dill, chopped (optional)
Directions
In a large bowl, combine the sliced cucumbers and onions.
In a separate saucepan, combine the vinegar, water, sugar, salt, pepper, garlic powder, and red pepper flakes. Bring to a simmer, stirring occasionally, until the sugar dissolves.
Pour the hot vinegar mixture over the cucumbers and onions, then stir to combine.
Let the mixture cool to room temperature, then refrigerate for at least 4 hours or overnight for the best flavor.
Garnish with fresh dill before serving.
Pairs Well With
Pairs wonderfully with grilled salmon or a refreshing iced green tea.
