Fresh Salsa

"Vine ripened tomatoes, sweet pepper, onion, jalapeno, garlic, cilantro, and lime."

We were used to grocery store salsa until we moved to Oklahoma. At every gathering someone always brought fresh salsa. Who knew how easy it is to make and so wonderfully fresh tasting. Salsa really is only as good as the quality of the ingredients though.
Ingredients You'll Need
4-5 vine ripened tomatoes, chopped
1 sweet pepper, chopped
1 onion, chopped
2 cloves garlic, minced
1 jalapeno, seeded and chopped (add the seeds for more heat)
1/2 bunch cilantro, minced (about 1/2 c.)
juice of one lime
1/2 t. cumin
freshly ground sea salt to taste
freshly ground black pepper to taste
Directions
Chop by hand if you are a purist, otherwise use your food processor to save time. Mix all together in a large bowl. Taste and adjust seasoning. Refrigerate for 1 hour before serving to marry flavors. Will keep several days, covered in refrigerator.
