Ingredients You'll Need
1 pound fresh strawberries, rinsed and hulled
1 cup heavy cream
1/2 cup white chocolate chips, divided
1/4 cup granulated sugar
1 teaspoon vanilla extract
Pinch of salt
Directions
In a blender or food processor, puree the strawberries until smooth. Set aside.
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
Remove the cream from heat and add 1/4 cup of the white chocolate chips. Let stand for 2 minutes, then whisk until the chocolate is completely melted and the mixture is smooth.
Whisk in the pureed strawberries, sugar, vanilla extract, and salt until well combined.
Pour the strawberry ganache into individual serving dishes or ramekins.
Refrigerate for at least 2 hours, or until set.
Just before serving, garnish each portion with the remaining 1/4 cup of white chocolate chips.
Store any leftovers in the refrigerator for up to 3 days.
