Ingredients You'll Need

5 cups water
2 vegetable bouillon cubes
5 roma tomatoes diced
1/2 red bell peppers diced
1 onion chopped
4 garlic cloves minced
dash of olive oil
4 whole eggs
4 eggs whipped
handful of mint chopped


In pot sauté onions and garlic in oil.

Add water to pot and bring to boil.

Add bullions, tomatoes and bell pepper.

Reduce heat and simmer for 10 minutes.

Add whipped eggs stir and cook for 1 minute then add whole eggs and cook for 1 minute.

Add mint and serve.
