Fried Polenta

Why I Love This Recipe
This is corn meal mush fried and seasoned for taste.

Ingredients You'll Need
1 Quart water
1 Cup cornmeal
2 Tablespoons margarine
1/2 Cup Parmesan cheese
2 Cans potted meat
Salt and pepper to taste
2 Tablespoons olive oil
Directions
Heat water in a sauce pan and whisk in cornmeal. Slowly cook for 10 minutes until thickened. Stir in all other ingredients. Remove from heat and place in a buttered loaf pan. Let it firm up for 30 minutes. Remove from pan and slice into patties. Heat olive oil in a skillet and fry polenta until browned on both sides.
