Fried Pork Ribs with Lasagna Roll-Ups

What’s better than pork ribs?! Really?! Seriously?! I’m joking!! Whenever, I cook ribs (pork, beef), it’s always bbq ribs. So today, I decided to fry them. Gotta tell you man, they slappppp!!! The best thing about fried ribs is that you can make your own favorite sauce. And that’s what I did!! LOL
Now, let’s talk about my lasagna roll-ups. Not only they look good but delicious. For someone who doesn’t eat/like cheese, I love lasagna. They are served in neat individual portions unlike the messy sloppy layered squares.
Ingredients You'll Need
Fried Pork Ribs:
1 -2 pounds pork ribs
2 cups épis
1/3 McCormick bourbon spice
2 tbs garland garlic
1/2 tbs ginger
1 tsp cajun
1 tbs adobo
Canola oil
1 scallion
1/2 red & green bell peppers
1/2 white & red onions
1 cup water
1 tbs matouk’s
1/2 tbs tomato paste
1/3 salt
Lasagna Roll-Ups:
8 oz lean ground beef
1 cup épis
1 white onion chopped
1 tbs garland garlic
1 tbs adobo
1 bag grated mozzarella cheese
1 cup grated parmesan cheese
12 uncooked lasagna noodles
1/2 jar Prego sauce
Directions
Place pork ribs in a bowl. Add all the ingredients listed above (except for the oil) and toss well to coat. Set in to marinate for at least 1 hr or 2
Transfer the marinated ribs into a pan. Add water and let boil for 1 hr
Heat up the deep fryer set up to 300 degrees
Place first batch of ribs in oil
Fry ribs 5 - 10 minutes or until deep golden brown
On a separate skillet, heat over medium to high, add olive oil
Add tomato paste. Let it fry for 2 minutes
Then, add 1 cup water and season with salt. Let it simmer down
Then, add sliced onions and bell peppers. Don’t overcook them
Add the fried ribs and toss. Let it for 5 minutes
Place ribs on a casserole dish and sprinkle fresh scallion on top
Serve with lasagna. Enjoy!!
Lasagna Roll-Ups:
Preheat oven to 375 degrees
In a large pan, crumble ground beef, add épis, adobo and chopped onions
Cook mixture stirring occasionally and breaking up meat until browned
Drain fat from beef
Cook lasagna noodles in a large pot of boiling water along with 1 tsp salt
Once noodles are cooked, drain and line them in a single layer
Spread prego sauce, meat and cheese on each noodle
Roll up noodles, transfer to casserole dish, spread with mozzarella cheese and then, bake uncovered until cheese is golden
Garnish with dried parsley to serve
