Fruit Squares (kinda like a bar cookie)

Why I Love This Recipe
My hair stylist gave me this recipe and I love it for it's rich flavor but also because it has only 4 ingredients and is so quick and easy to make. I'm a big fan of dishes that taste like I worked harder than I did.
Ingredients You'll Need
2 cups flour
2 sticks butter (no substitutes)
1/2 cup sugar
18-oz jar apricot preserves
Directions
Melt butter and mix with flour and sugar.
Dough will be very soft.
Save 1/3 of dough to use for topping.
Pat remaining dough on bottom of ungreased 9x13" pan.
Heat preserves in microwavable bowl or in pan on burner--just enough to make preserves easily spreadable.
Spread over dough in pan.
NOTE: this will probably be a little too much apricot spread, so just reserve some of it to use on toast at another time.
Pinch off small pieces of the remaining dough and drop evenly over the top.
Bake for 1/2 hour or until top is golden (I begin checking at 20 minutes because the edges can burn easily and you know how ovens always bake differently).
Cool and cut into squares.
Other flavors of jam can be used but, for me, nothing beats apricot.
I love the flavor in EVERYTHING.
