GARLIC MASHED POTATOES

Why I Love This Recipe
Sometimes we want mashed potatoes but we are not serving gravy. Garlic mashed potatoes are wonderful for those times.
Ingredients You'll Need
6 red potatoes, peeled or not as you prefer
4-6 cloves of garlic, minced
1/2 stick butter (DF use Smart Balance)
3/4 c. half and half, more or less to taste (DF use coconut or almond milk)
freshly ground sea salt and freshly ground pepper to taste
Place quartered potatoes in a saucepan and cover with water. Add 1 t. salt. Bring to boil and cook until potatoes are quite tender. Drain potatoes and put back in pan over low heat. Meanwhile melt butter in microwave with minced garlic and pour into pan with potatoes. Let garlic cook a minute or two then start mashing potatoes with a potato masher and adding cream as you go until you reach desired consistency. Taste and adjust seasoning before serving.
