GF Buttermilk Biscuits
Why I Love This Recipe
I use lard in my recipe but you can substitute shortening or butter instead.
Any leftover biscuits are best kept frozen.
Ingredients You'll Need
1 1/4 cup buttermilk
1 teaspoon baking soda
1 teaspoon vinegar (apple or white)
2 1/2 cups (350 grams) Gloria's GF flour
6 tablespoons (78 grams) lard
5 tablespoons (24 grams) baking powder
1 tablespoon (16 grams) sugar
1/2 teaspoon salt
Mix together the baking soda and vinegar together and add it to the buttermilk and set aside.
Using a paddle attachment in the mixer bowl, combine the rest of the ingredients until well combined.
Add the buttermilk mixture and mix for 3 minutes. The dough will be very sticky.
On a parchment paper lined cookie sheet, divide the dough in 8 mounds using an ice cream scoop. Using wet fingers, flatten each dough mound to about 1/2 inch thick. I use English muffin rings to help shape the biscuit. Let the biscuits rest while the oven is pre-heating to 400*
Bake the biscuits for 18- 20 minutes. Let the biscuits sit on the cookie sheet for about 5 minutes before removing. Serve warm
