GF Slider Buns

When my grandson, David has friends over, the boys always enjoy a platter of sliders with an assortment of meats, cheeses, and toppings that boy can make to his taste. Adults enjoy these at get togethers as well.
Ingredients You'll Need
1 1/2 c. milk or water, your choice
3 T. sugar
1 t. salt
1/4 c. olive oil
4 eggs
1 T. yeast
3 1/2 c. GGFG Baking Mix (or mix of your choice)
3 1/2 t. zanthum gum (if using another mix, check to make sure it includes zanthum gum)
Directions
Heat milk or water in microwave for 3 minutes. Pour into bowl of stand mixer and start mixer on low speed. Add sugar, salt, olive oil, and eggs. Beat well. Turn off mixer and add baking mix and zanthum gum. Stir by hand until moistened, then turn mixer on medium and beat well. Prepare muffin pans by greasing well and lining bottom with parchment paper. Put a spoonful of dough into each of 24 muffin pan holes, smooth tops. Bake in an oven preheated to 375F for 20-25 minutes or until they sound hollow when tapped and are lightly browned. Remove from oven and cool for 5 minutes before removing to wire rack to cool completely.

A variety of cold cuts and cheeses, or small burgers.
