GGFG HAMBURGER BUNS

I used to purchase hamburger buns for my grandson, David at the grocery. The buns were a bit hard and rather thick. So one day I tried making buns using GGFG bread recipe. It worked great.
Ingredients You'll Need
3 ½ c. Grandmas GF Baking Mix (or mix of your choice)
1 T. + ½ t. zanthum gum
1½ c. milk (may use coconut milk or soy milk for allergy considerations) or water
¼ c. olive oil
4 eggs (may use whites of 5 eggs for allergy considerations)
3 T. sugar
1 t. salt
1 T. dry instant yeast

Directions
Preheat oven to 375 F. Microwave milk or water on high for 2 ½ minutes, pour in mixer bowl and start mixer on low; add olive oil, eggs, sugar, and salt. Mix well. Add yeast, mix . Turn off mixer and add Baking Mix and zanthum gum; stir by hand until moistened. Turn on mixer and beat well. Drop 10 spoonfuls of dough onto baking sheet lined with parchment paper, spread dough into a 4" round and smooth top. Bake for 25 minutes. Cool on baking sheet for 5 minutes; turn out onto wire rack to cool completely before slicing buns and putting into a plastic bag. Makes 10 buns. Freezes well. .
