Why I Love This Recipe
Selamat makan! In Indonesia gado means vegetable. Gado gado is vegetables.
This is the Americanized version of this national dish, Gado Gado. A great way to get your family to eat more veggies.
Ingredients You'll Need
vegetable suggestions:
spinach leaves
cucumbers
shredded lettuce
green beans
carrots
boiled potatoes
bean sprouts
hard boiled eggs
fried tofu
Sauce:
1 cup of chopped onion
6 cloves of minced garlic
3 T. of oil
1 cup of boiling water
2 cups of crunchy peanut butter
2 T. of honey
1 t. of Tabasco
1 T. of lemon juice
1 T. of fresh ginger
3 cups of milk
Shrimp chips (optional)
Directions
Gather an assortment of veggies both raw or lightly cooked, and place in a salad bowl.
To make the sauce: Sauté onion and garlic in oil.
Stir in boiling water, peanut butter, honey, Tabasco, lemon juice and ginger.
Cook sauce over medium heat until hot and peanut butter is melted.
Gradually stir in milk.
Serve the sauce over the veggies.
Shrimp chips are the classic accompaniment.

As far as the sauce for gado gado concerns we use Ketjap Manis Cedang which has only 450 mg of sodium per serving. Since Kathie's tolerance for spicy hot is very minimal I add sambal oelek or sambal badjak at dinner time.
