Gajar (Carrot) Halwa is a most special dessert which is a popular item in Indian households, especially in the winter season. It is not an exaggeration to state that India’s love for this Ghee laden dessert knows no bounds. For many Indian homes, winter is synonymous with Gajar Halwa. Its aroma, flavour, and richness spell indulgence, and one cannot be satiated with one serving.
Ingredients You'll Need
Carrot- 1 kg
Milk- 1 and a half Litres
Green cardamoms - 8
Ghee- 5 to 7 tbsp
Sugar- 5 to 7 tbsp
Raisins-2 tbsp
Shredded almonds-1 tbsp
Chopped dates-2 tbsp
Directions
Do peeling and grating of carrots
Simmer grated carrots in milk along with cardamom, waiting till the milk evaporates
In a heavy pan, heat Ghee and add carrot mix
For 10 to 15 minutes, cook this mix over a gentle flame
Stir in sugar and resume cooking till Halwa assumes a deep red hue
Add dry fruits and serve warm.
