Ingredients You'll Need

1 lb spaghetti or linguine
3 tbsp unsalted butter, divided
5 cloves of garlic, finely minced
1/4 cup olive oil
1 cup grated Parmesan cheese
1/4 cup chopped parsley
1 tsp salt, plus more to taste
1/2 tsp black pepper
1/2 lb cremini mushrooms, thinly sliced
1/4 cup heavy cream


Directions

1. Bring a large pot of salted water to a boil and cook the spaghetti according to the package directions until al dente. Drain and reserve 1/2 cup of pasta water.
2. While the pasta cooks, heat 2 tablespoons of butter in a large skillet over medium heat until melted.
3. Add the sliced mushrooms to the skillet and sauté for about 5-7 minutes, or until they are golden and tender. Remove and set aside.
4. In the same skillet, add the remaining 1 tablespoon of butter and olive oil over medium heat. Stir in the minced garlic and sauté for 1-2 minutes until fragrant.
5. Lower the heat and mix in the reserved 1/2 cup of pasta water along with the heavy cream. Simmer for another 2-3 minutes.
6. Toss the cooked pasta into the skillet. Quickly mix in the sautéed mushrooms, Parmesan cheese, parsley, salt, and black pepper until the noodles are evenly coated.
7. Serve immediately, garnished with additional Parmesan and parsley as desired.
