4 yellow potatoes, washed

Directions
1. Preheat your oven to 400°F (200°C).
2. Cut the yellow potatoes into bite-sized cubes and place them in a mixing bowl.
3. Toss the potatoes with 2 tablespoons of olive oil, dried thyme, dried rosemary, and a generous pinch of salt and pepper.
4. Spread the seasoned potatoes on a baking sheet in a single layer.
5. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.
6. While the potatoes are roasting, pat dry the petite sirloin steaks with paper towels and season generously with salt and pepper on both sides.
7. Heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat.
8. Once hot, add the steaks and sear for about 3-4 minutes on each side for medium-rare, or adjust based on your preferred doneness.
9. Turn off the heat and add the butter and minced garlic to the skillet, spooning the melted butter over the steaks to baste them.
10. Let the steaks rest for 5 minutes after cooking.
