Garlic Mashed Potatoes (Using Cauliflower instead of potatoes)

This recipe replaces potatoes with cauliflower which has many health benefits. It is an excellent source of vitamins and minerals, containing some of almost every vitamin and mineral that you need. It also contains a high amount of fiber, which is important for digestive health and may reduce the risk of several chronic diseases.
Ingredients You'll Need
Two Heads Cauliflower
1 Pint Sour Cream
1 container of Can't Believe It's Not Butter
1/2 Cup Minced Garlic
Salt & Pepper
Directions
Broil minced garlic in butter until brown- set aside.
Steam Cauliflower until soft then mash in a food processor.
Add sour cream and butter and mix until itis a whipped potato consistency.
Fold in garlic, salt & pepper.
