Garlic Roasted Chicken and Potatoes

Why I Love This Recipe

Recipe is from Allrecipes, submitted by Debi Blair McGinness. Recipe can easily be doubled to serve 8. I made this in my new copper frying pan in the oven. Came out great!


Ingredients You'll Need

2 Tbsp butter
3 chicken leg quarters
3 large Yukon gold potatoes, cut into chunks
12 cloves garlic, unpeeled
salt and ground black pepper to taste
2 Tbsp maple syrup


Directions

Preheat oven to 400.


Place butter in the roasting pan and melt in the oven. Swirl to coat bottom of pan and place the chicken, potatoes and unpeeled garlic cloves into the pan. sprinkle with salt and black pepper. Turn the chicken, potatoes and garlic to coat with butter.


Bake until chicken is no longer pink and the juices run clear, about 40 minutes, basting 3 times with pan drippings.


Remove from oven and brush maple syrup over chicken, and pan drippings over potatoes.


Return to oven and bake about 20 minutes more, until chicken and potatoes are tender and brown. (thermometer in chicken should read 165 degrees)


To serve, squeeze garlic from the baked cloves and spread it over the chicken. Pour pan juices over all.
