Here's a delicious and simple recipe which you can easily adjust based on how much garlic scapes you have. You can omit the walnuts and Parmesan and / or add them later, especially wants to freeze the pesto in ice cubes. This recipe is very versatile; experiment by adding basil, lemon, or replace garlic scapes with coriander or arugula. The garlic scape pesto is delicious in soups, pasta, and sandwiches. Possibilities are endless.
Ingredients You'll Need
A large bouquet of garlic scapes (about 3 pounds)
1-2 olive oil cups (you can cut oil up to 1/2 or a bit more and add water instead)
¾ cup Parmesan cheese (optional- I always leave this out)
1 cup finely chopped nuts (or pine nuts, almonds, sunflower seeds ...) (optional)
Salt, to taste
Directions
If you have time, I recommend blanching the garlic scapes first - put them in boiling water for 30 seconds (this improves the color and texture of the pesto but I rarely do it). Add garlic scapes to the food processor with olive oil and grind until you are satisfied with the texture. Add salt to taste.
