Garnalen Croquetten - Dutch shrimp croquettes

Ingredients You'll Need
2 cups cooked shrimp (prawns)
1 envelope plain gelatin
4 tablespoons flour
4 tablespoons butter
1 cup low fat milk
2 egg yolks
light cream
juice of 1 lemon
salt & pepper to taste
4 egg whites
2 tablespoons vegetable oil
dry bread crumbs
fat for deep frying
Directions
Wash and drain the shrimps. Soak the gelatin in some of the cold milk. In a medium sauce,make a thick sauce of flour, milk and stock, and add the shrimps and gelatine. Beat the egg yolks with the cream, add to the sauce. Place saucepan on medium heat, and stir mixture until it thickens, taking care that it does not boil. Add lemon juice. salt and pepper. Spread this mixture onto a shallow dish to cool and set.
When set, cut in 16 equal parts and form a firm cylinder of each. Roll each in bread crumbs, then in a mixture of beaten egg whites and vegetable oil and then again in bread crumbs, again in egg whites and bread crumbs. Fry in hot deep fat (400ºF) until golden brown. Serve hot with Dutch mustard.
