Gen's Quick Mediterrenean Cucumber Salad

Why I Love This Recipe
FEATURING: Cucumbers, green onions (or fresh or storage onions), basil, tomatoes (optional), and peppers (optional).
A quick and easy salad we love to make when it is hot or we don't have much time on our hands. We eat it as a meal but it also makes a good side dish. To stretch it out, I sometimes add cooked pasta (or quinoa or semolina/couscous) to it.
Ingredients You'll Need
1/2 to 1 small fresh onion, thinly sliced
2 cucumbers, cut into bite-size chunks
2 tomatoes, cut into chunks (optional)
1/2 to 1 cup Kalamata black olives, pitted
Several sprigs fresh basil, about 1/2 cup
1 can of red kidney beans, rinsed and drained
2-3 tablespoons of extra-virgin olive oil
3 tablespoons (3 splashes) of rice wine or red wine vinegar
1-2 tablespoons of lemon juice (optional)
Sea salt and black pepper to taste
1-2 green onions, chopped
Directions
Combine all ingredients in a large bowl. Mix well. Season with salt and pepper and let the salad marinate until ready to serve. Add chopped green onions to each plate/bowl when serving.
