Gen's Quick Swiss Chard Pasta #2

Why I Love This Recipe
FEATURING : Swiss chard, tomatoes, onion (or fresh onions) & garlic (or garlic scapes).
A very quick & easy pasta dish that we like to make when we need a dinner in no time flat!
Ingredients You'll Need
1-2 Tbsp olive oil
1/2 onion, chopped
2 peeled cloves of garlic (or 2 garlic scapes), chopped finely
2-3 cups tomatoes, cubed (approx. 2-3 tomatoes)
2 cups of Swiss chard, leaved finely chopped & stalks chopped like celery and kept separately (approx. 3-4 leaves with stems)
3/4 tsp salt, or to taste
1/4 tsp of hot crushed chili peppers (optional)
Pepper, to taste
Juice of 1/2 lemon (or more or less, to taste)
A handful of fresh basil, chopped finely (optional)
500 g of pasta, cooked according to directions
Directions
Heat a pan. When hot, add the olive oil until hot. Add the onion and sautée until translucent. Add the garlic and the tomatoes and sautée 3-5 minutes, smashing the tomatoes periodically with the back of a wooden spoon.
Add the chopped Swiss chard leaves and sautée another 5-7 min until the chard is well cooked. Add salt and pepper to taste. Mix well. Turn off heat and remove from heat. Add lemon juice. Adjust the seasoning if needed. Serve on pasta. Add chopped Swiss chard stalks & chopped basil to bowl when serving.
VARIATION: You can add crumbled tofu or cheese, if you want, just before removing from the heat.
