Gen's Swiss Chard Tomato Pasta

Why I Love This Recipe

This is a recipe I created one day as I was running out of time to make dinner for my starving family. It's quite simple in taste but it became an instant classic that we like to come back to on a regular basis. You can add a bit of basil at the end (or to each plate) if you have some.


Ingredients You'll Need

1-2 Tbsp olive oil
1 onion, chopped
2 cups tomatoes, cubed (approx. 2 tomatoes)
1 bunch of swiss chard, chiffonaded (approx. 5-6 leaves with stems)
1 tsp salt (or to taste)
Pepper, to taste
1/2 package of firm tofu (e.g. La Soyarie), that you will crumble by hand (or you could use feta cheese)
Juice of 1/2 lemon (or more or less, to taste)
500 g of pasta, cooked according to directions


Directions

1. Heat a pan. When hot, add the olive oil until hot. Add the onions and sautée until translucent. Add the tomatoes and sautée 3-5 minutes, smashing the tomatoes periodically with the back of a wooden spoon.


2. Add the swiss chard and sautée another 5-7 min until the chard is well cooked. Add salt and pepper to taste. Add the tofu that you crumbled by hand over the pan. Mix well. Turn off heat and remove from heat. Add lemon juice. Adjust the seasoning if needed. Serve on pasta.
