German Apple Cake

Our family is quite fond of German food and this is a great dessert to go with a German meal.
Ingredients You'll Need
For Cake:
3 eggs
2 c. sugar
1 c. vegetable oil
1 t. vanilla
2 c. GGFG Baking Mix (or mix of your choice)_
2 t. zanthum gum
2 t. cinnamon
1 t. baking soda
1/2 t. salt
4 c. Gala Apples, peeled, cored, and chopped
3/4 c. pecans, chopped
For Frosting:
8 oz. package cream cheese
1/2 stick butter
4 c. confectioner's sugar
1 t. vanilla
milk as needed for consistency
Directions
In bowl of stand mixer, beat eggs until frothy. Add sugar, oil, and vanilla and beat well. Turn off mixer, and add GGFG Baking Mix, zanthum gum, cinnamon, baking soda, and salt; stir by hand until moistened, then turn on mixer and beat well. With mixer on low, mix in apples and pecans. Pour into 9"X13" baking pan lined with parchment paper and put into an oven preheated to 350F. Bake for about 45 minutes, checking after 30 minutes, until knife comes out with moist crumb. Cool completely. Meanwhile make frosting by beating cream cheese and butter until softened, slowly add confectioner's sugar and a little milk, beating well with each addition. When frosting comes together, add vanilla, turn mixer to high and beat well, adding sugar or milk as needed for consistency. Frost cake. Refrigerate leftovers. Freezes well.
