Ginger Carrot Soup

Why I Love This Recipe
When winter is here in the mountains of Montana, I often want a warm soup that is quick, nutritious and easy. This is it!
Ingredients You'll Need
3 large carrots
1 teaspoon minced ginger or ginger root
1 cup water, soy milk or other liquid
1/2 veggie broth bouillon cube
Directions
Combine all ingredients in the Vitamix. Turn Vitamix on high for about 5 minutes, until steaming hot and creamy.
Serve and enjoy!
