Gingerbread Energy Balls - raw vegan

"Raw Vegan Sweet Energy"

Serves 12 | Prep Time 15-20 minutes | Cook Time

Why I Love This Recipe

Healthy choices will make you smile when you bit into one of these.

Ingredients You'll Need

1/2 cup raw cashews
1/2 cup shredded coconut
1/4 cup raw almonds
1/2 cup soft pitted dates (6)
1/2 tsp vanilla powder
--or 1 tsp vanilla extract
1 tsp coconut oil
1" chunk of fresh ginger rough chopped
1 tsp water
pinch of salt

coconut and ginger powder for coating


Process all ingredients except for the water in a food processor.
When mixture resembles a fine meal, add the water.
Incorporate the water at low speed.

Scoop about 1 Tbsp of the mixture, press together and roll into a ball.
Roll the ball in the coconut ginger powder and coat well.
Store in fridge or freezer.

Pairs Well With

Nut milk, tea, coffee
