Giovanna's Johnny Cakes - Updated

"Another take on cornbread"

Close to Grandma's original recipe. The batter smelled like cake batter! The vanilla, egg, and sugar, I’m sure! The consistency was surely cornbread.
Ingredients You'll Need
1/3 cup sugar
3/8 cup butter, softened
1 cup buttermilk (sour milk)
1 egg
½ teaspoon baking soda
1 cup cornmeal
1 cup flour
½ teaspoon vanilla
Did not add raisins
Directions
Preheat oven to 400 degrees F
Grease an 8 inch ceramic pie pan or 8 inch cast iron pan
Combine flour, cornmeal, sugar, and baking soda into bowl. In a separate bowl, whisk together butter, egg, buttermilk, and vanilla. Pour wet ingredients into dry ingredients and mix until just blended.
Pour into prepared pan and level out.
Bake for 30 minutes or until golden brown. Serve hot with butter. No need for honey on this Johnny Cake!
