Ingredients You'll Need
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar, divided
2 large eggs
1/2 cup whole milk
1/4 cup freshly squeezed lemon juice, divided
1 tablespoon lemon zest
1 teaspoon vanilla extract
3 tablespoons chopped fresh basil
1/2 cup powdered sugar
Directions
1. Preheat your oven to 350°F and grease a standard loaf pan.
2. In a bowl, whisk together the flour, baking powder, and salt; set aside.
3. In a large mixing bowl, cream together the softened butter and 3/4 cup of sugar until fluffy.
4. Add the eggs one at a time, beating well after each addition.
5. Mix in the milk, 2 tablespoons lemon juice, lemon zest, and vanilla extract.
6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
7. Gently fold in the chopped fresh basil.
8. Pour the batter into the prepared loaf pan and smooth the top.
9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
10. While the bread is baking, prepare the glaze. Mix the powdered sugar with the remaining 2 tablespoons of lemon juice and 1/4 cup sugar to form a smooth glaze.
11. Once the bread is out of the oven, cool it for 10 minutes in the pan before transferring it to a wire rack.
12. Brush the bread with the lemon glaze while still slightly warm, allowing it to soak in.
13. Slice when cool, and serve.
