"Yummy (and GF) streusel topped breakfast muffins"

Serves 12 | Prep Time | Cook Time 18 minutes

Why I Love This Recipe

I do not eat GF, but this is a great healthy alternative to my other blueberry muffin recipe.


Ingredients You'll Need

3 ripe Bananas
1/2 Cup of Sugar
1 egg
1/3 + 1tsp cup of coconut oil
1 Cup of blueberries
1 tsp of baking soda
1 tsp of baking powder
1/2 tsp of salt
1 1/2 cups Bobs GF Flour
Xanthan Gum (3/4 tsp per 1 cup of GF flour)

TOPPING:
3/4 tsp Cinnamon
1/8 cup of butter
1/4 cup of sugar
1/6 cup of GF flour


Directions

Mash bananas in a bowl, add egg, sugar, and mix


Add coconut oil


Combine dry ingredients and slwly add to wet mixture


Add blueberries, gently mix.


Pour into parchment paper in muffin tins. Mix topping mix together in a small bowl with a fork and sprinkle evenly on muffins.


Bake at 375 for 18 minutes
