Why I Love This Recipe
This is based on a slimming world recipe, however is so far changed that I wouldn't call it that anymore! It is however delicious and great for a picnic salad.
You should be able to make it cheaper by using a less expensive meat, such as ham. You can use a variety of soft cream, I used cracked pepper, which was delicious.
One of those recipes that is a keeper for me!
Ingredients You'll Need
2 slices of prosciutto (or similar ham)
Small amount of salad leaves of your choice
1 tomato, sliced
1 cooked, skinless and boneless chicken breast, thinly sliced
2 tsp low fat flavoured soft cheese (your choice!)
4 basil leaves.(optional)
Salt and Pepper to taste
Lay 2 slices prosciutto on a chopping board, next to each other with the long edges overlapping slightly. Scatter chicken, salad leaves, tomato and basil leaves along the prosciutto, leaving an inch at the end so you can roll it. Dot the cream cheese on top. Add salt and pepper to taste.
Lift the end of the prosciutto and roll into a tight roll. (I have yet to perfect this as my photo shows, however practice makes perfect!)
