Gluten Free Broccoli and Blue Cheese Soup

The idea originates from a Weight Watchers book called time to eat. I have adapted it. This is an old book.
In my experience, whatever plan you are using to help you lose weight, finding a cookbook that has recipes that you like and trying some of these is a really good idea. It is far easier to control what you put in a dish if you learn how to cook it and work out how to fit the recipe to your current plan.
I am currently attending a Slimming World group and I know this is not free, however the blue cheese may well fit into a healthy extra A, although you will have to look this up to be sure.
This is delicious though and I feel it justifies any points/syns/calories it contains. I doubt it is many!
Ingredients You'll Need
450 g Broccoli, broken into florets (you can use the stems)
225 g Leeks, sliced
225 g potatoes, peeled and diced
1.2 litres gluten free vegetable stock
50 g blue cheese, crumbled
Salt and pepper to taste
Directions
Place broccoli, leeks, potato and stock in a large saucepan and bring to boil. Reduce heat and simmer for 20 minutes
Blend/liquidise.
Return to pan and reheat
Add blue cheese and heat until the cheese dissolves. Season to taste
